Pepper
Peppers (Capsicum) belong to the nightshade family and originally come from Central and South America. Today, peppers are cultivated on a large scale in tropical regions all over the world. To produce paprika as a spice, ripe, highly aromatic paprika fruits are gently dried and then ground. The degree of pungency depends mainly on the variety of paprika, its inherent pungency and the proportion of seeds and septums. Incidentally, Hungarian-style paprika is classified, with decreasing pungency, as follows: Rose paprika, Semi-sweet, Sweet, Delicacy and Extra.
