Many mushroom varieties have a high mineral and vital substance density and are very low in fat and calories. In China, so-called vital mushrooms have a long tradition. Varieties such as chaga, shiitake, the caterpillar fungus (Cordyceps sinensis), the patent fungus (reishi) or spiny bear (hericium) have been used there since time immemorial. Originally, these varieties come from China, Korea and Japan. In the course of time, however, they have spread all over the globe.
