Agar agar is obtained from the cell walls of dried blue and red algae, which are then ground into powder. Agar agar is known as a vegan gelling agent and has many uses. The vegetable product can also be used in soups, ice cream, puddings and creams. Agar agar gives your dishes the desired firmness without the use of animal gelatine. The gelling power of agar agar is significantly stronger than that of conventional gelatine and should therefore not be replaced 1:1. 6 sheets of gelatine (10g) correspond to about 4g of Agar Agar.
