Potato flour is starch extracted from potatoes. It is therefore not a classic flour such as wheat flour, but pure natural starch. Potato flour is the ideal gluten-free, vegan kitchen aid for thickening soups and sauces, as well as for fluffing up pastries and cakes. Potato starch has a higher water-binding capacity than food starch and is therefore popular for baking with fruit and curd.
