Tapioca is a neutral starch made from the cassava root. Tapioca starch is gluten- and allergen-free. Tapioca starch is often used in the preparation of gluten-free baked goods. It gives yeast dough a particularly airy, soft texture and keeps gluten-free baked goods fresh for longer.
