Pine nuts (ital. Pinolo, plural Pinoli) originate from Italian cuisine and are the seeds of the pine trees that grow in the Mediterranean region. However, the pine trees originally come from Asia Minor. The small but very fine seeds come exclusively from wild pine trees and have to be harvested by hand. The small kernels have to ripen for a whole three years before they can be picked - they are among the finest nuts in the world. The aroma is unique - reminiscent of almonds and the creamy soft texture and resinous flavour make the kernel perfect. A must for a green and red pesto!
